Ingredients

  • 2 cups of sushi rice
  • 4 cups of water
  • 2 tablespoons of Shoyu (soy sauce)
  • 1 tablespoon of Mirin (sweet rice wine)
  • 1 teaspoon of sugar
  • 1 tablespoon of sesame oil
  • 4 boneless, skinless chicken thighs
  • 1 cup of sliced carrots
  • 1 cup of sliced bell peppers
  • 1 cup of broccoli florets
  • 2 teaspoons of sesame seeds
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions

  1. Prepare the Rice:
    • Rinse the sushi rice under cold water until the water runs clear.
    • In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 18 minutes.
    • Remove from heat and let it stand, covered, for 10 minutes.
  2. Prepare the Shoyu Sauce:
    • In a small bowl, whisk together Shoyu, Mirin, sugar, and sesame oil. Set aside.
  3. Cook the Chicken:
    • Season chicken thighs with salt and pepper.
    • In a large skillet, heat a tablespoon of sesame oil over medium-high heat.
    • Add chicken thighs and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
  4. Sauté the Vegetables:
    • In the same skillet, add carrots, bell peppers, and broccoli.
    • Sauté until vegetables are tender, about 5-6 minutes.
    • Slice the cooked chicken and return it to the skillet with the vegetables.
  5. Combine and Serve:
    • Pour the Shoyu sauce over the chicken and vegetables, stirring to combine.
    • Sprinkle sesame seeds over the dish and garnish with fresh cilantro.
    • Serve hot over the prepared sushi rice.
